Elimination Diet!

I’m getting ready to rock a 4-6 week elimination diet! For 4 weeks I will eliminate the most common allergens plus things that I know (from a blood test) I’m personally sensitive to. So the common allergens im giving up are corn, gluten, soy, peanuts, sugar, and processed foods (I already don’t eat dairy & eggs of course). The heartbreakers I’m also sensitive to personally are bananas, pineapple, and green peas. Doing this will eliminate my daily superfoods shake I’ve been drinking the last few years and I fully expect to get a little cold while my body adjusts to not having it’s normal immunity booster! 

It’s also going to make my life challenging because I eat popcorn almost daily and soy is a staple in my milk and on my plate. Losing gluten will suck but not a huge deal with all the awesome things like potatoes & rice that are gluten free!

Do I think soy and corn and gluten are bad for you?? Heck no!!! I think they’re probably just fine for most people based on most of the studies I’ve read. However I know there’s something funky going on in my intestines/digestion and I’m just trying to figure out what’s up with that. 

For years (going back to before I went vegan) I’ve felt bloaty and digestion discomfort. I’ve tried following a whole food plant based diet cutting out a lot of stuff, I’ve tried cutting out gluten and sugar for a month. I’ve tried adding probiotics and digestive enzymes. Now I’m trying a big change to hopefully get to the root of the problem, which I’m terrified is going to be corn. You never know though! And sometimes giving up the trigger food for a long time will allow your body to heal whatever was causing it to be a trigger food and it won’t be a trigger any more! 

So I’m going to share my journey and meals with you guys here! I’m using the rich roll meal planner that uses the lighter tech to create my meal plans. I put in what I can’t eat (and don’t like… aka celery) and it spits out a week of meal ideas. So incredible! 

I can share my meals with you but can’t share the recipes so I’ll try to find similar recipes for you guys to try!
