Some days you wake up and get totally inspired to make something awesome. Most days I’m just focused on making my coffee and my shake. But this morning I checked Facebook and one of my friends in my monthly accountability group posted about her delicious breakfast from the protein bar: a peanut butter acai oatmeal. Whaaaaat! I needed it. But I don’t love near her so I couldn’t get one. So I decided to make my own.
I wish it photographed better but damn it’s delicious!
PB Acai Oatmeal Bowl
1 serving overnight oats (oats, soy milk, chia seeds, vanilla)
1 packet Sambazon unsweetened acai (frozen)
1/4 C soy milk
1 tsp peanut butter (I used almond butter)
1 scoop shakeology
1/2 frozen banana
Drizzle agave (optional)
1. Blend soy milk, acai, shakeology, and peanut butter until smooth
2. Stir into overnight oats
3. Drizzle with agave
Hahaha it’s so simple!!! I love it!
And by adding the shakeology you add tons of nutrition so basically I had a salad for breakfast but it tasted like dessert. Score!
