Make your own Chipotle burrito bowl

I love me some chipotle but sometimes you just want to stay in and eat something in the house. Or save some moola. Or not get the million calories that are in a chipotle burrito bowl. Whatever your reason i suggest you make these burrito bowls STAT. they are so delicious and customizable for whatever you have in the house or are in the mood for!

 

Base Options:

Brown Rice

Wild Rice

Quinoa

 

Veggie Layer Options:

Tofu

Fajita Veggies (Green pepper & onion sautéed with your favorite spice mix- i like cumin and oregano)

 

Toppings:

Vegan Sour Cream

Guacamole

Salsa

Beans

 

Toss the rice or quinoa with cilantro for some extra flavor or cook it with vegetable stock to spice things up. Sautee the tofu and/or veggies with loads of seasonings like cumin, oregano, and chili powder. Sautee the beans (any kind you like!) with the veggies to get that yummy flavor on them as well. Make your own salsa by chopping tomato with onion (yellow and/or red), garlic, lime juice, jalapeno, cumin, and cilantro and voila! You have fresh and delicious homemade salsa!
