21 Day Fixin It Up: Buffalo Tempeh!

imageSo i got the amazing new 21 day fix cookbook touted to include paleo, gluten free, vegetarian and vegan options! SO EXCITING! until you open it, that is. there are ZERO vegan entrees. NOT A SINGLE ONE. how disappointing, right? wrong!! I’m nothing if not up for a challenge and this gives me so many great ideas of recipes i can 21 day fix-ize to make 21 day fix suitable but vegan and delicious!! For this one i definitely went simple. i had buffalo tempeh when i was in nashville last week and felt inspired!

So how did I make it? Read how easy and prepare to have your mind completely blown!! Added a side of sauteed spinach mixed with some ranch and voila! delicious, healthy, 21 day fix approved meal. what more could you ask for?

Serves: 2
21 Day Fix Portions: 1 Red

Ingredients:

1 8 oz Package Tempeh (I use Lightlife brand)
4 T hot sauce (make sure you use a clean one that’s just peppers & vinegar & salt! i use this one >> http://amzn.to/1eeOHyO)

Instructions:

  1. Slice tempeh into strips
  2. Place tempeh in a steamer basket over boiling water and steam for 15-20 minutes
  3. Place steamed tempeh into a frying pan and top with hot sauce (add more/less as needed) and heat over medium heat for about 5 minutes until the hot sauce is all absorbed
  4. Enjoy!!

For the spinach I just threw it in the same frying pan after the tempeh was out and sauteed it about 3 minutes with a little bit of ranch.

The ranch I used is the BOMB! it’s basically just tofu and it’s so creamy and delicious! and since it’s just tofu it’s a red but if you’re just using a little bit don’t even sweat it. Get it at http://protectivediet.com/creamy-ranch-dressing.html?affiliate=36.
