Breakfast of Champs: Vegan Pumpkin Chocolate Shakeology Pancakes

Do you ever wake up on a weekend morning and just want a good solid breakfast? Something you don’t have time for during the week? I sure do!! and so i decided to make pancakes. BUT i truly believe in the power of Shakeology when you drink it every day (i skipped it for two weeks in April and got a cold… never doing that again!) so I didn’t want to skip my shake. The solution? Use shakeology in the pancakes! And then i wanted pumpkin pancakes as well so, well, i decided to combine the two. Surely someone had thought of this before, right? Right?! I couldn’t find ANY good vegan recipes for pumpkin chocolate shakeology pancakes! i know. craziness. So i decided to make my own recipe up. So i tried two different recipes- one for a single serving of pancakes when you’re cooking for one (that can easily be multiplied for larger groups) and one for a batch of pancakes to feed you and your family (well… depending on how big your fam is!). So here are my two recipes- i liked the second one better because i put more cinnamon in there but they were both delicious and i’d make both again!

Recipe #1:

3 T Flour (I used oat flour)
2 T Vegan Chocolate Shakeology
1/4 C Canned Pumpkin (NOT pumpkin pie filling)
1/2 t pumpkin pie spice
1/2 t cinnamon
1/3 C Soy Milk (or nut milk of choice)

Mix all ingredients together in a bowl with a spoon until well combined.

Recipe #2:

1 C Flour
1 t baking powder
1/2 t baking soda
1/4 t sea salt
1 t pumpkin pie spice
1 t cinnamon
1 Banana (ripe)
1 C Soy Milk (or nut milk of choice)
1/2 C Canned Pumpkin (NOT pumpkin pie filling)
1 1/2 T Maple Syrup

  1. Mix all Dry ingredients in a bowl with a spoon until well combined.
  2. Mix wet ingredients (banana, soy milk, pumpkin, maple syrup) in a blender (you can mix by hand but i’m lazy)
  3. Pour wet ingredients into the dry ingredients and stir until all the dry ingredients are wet

Both recipes the cooking of the pancakes is the same:

  1. heat a griddle until it’s warm on medium heat. While the griddle is warming you can clean up all your ingredients/do your dishes and let the batter sit.
  2. Lightly spray the pan with oil or use a non-stick pan.
  3. Pour pancake batter onto the warmed griddle.
  4. Heat the pancakes until you see the edges starting to brown- they will be a little thick so they won’t get bubbly like regular pancakes
  5. Flip and heat the other side keeping a close eye on them so they don’t burn!
  6. Top with maple syrup, pumpkin spice peanut butter, fresh berries, or your favorite toppings and enjoy!
